Vanilla Lemon Coconut Slice

Ingredients:

  • 3-4 cups shredded coconut
  • ½ cup lemon juice
  • ¼ cup coconut oil
  • 1 lemons zest
  • 7 tbsp rice malt syrup or honey
  • 20g bRAW ultimate plant protein (Vanilla) @brawprotein vanilla protein powder ⁣
  • Desiccated coconut for rolling

Method:

  1. Combine all ingredients except protein powder and desiccated coconut, in a food processor and blend until a sticky dough forms (if mixture is too dry, add more rice malt syrup until mixture sticks together well when pinched)
  2. Add protein powder and mix well using a wooden spoon
  3. Press dough firmly into a lined baking tray and freeze for 1hr or until firm
  4. Remove from tin and slice into desired size bars

Notes: Ensure to taste dough and add more rice malt syrup if you prefer it sweeter
