No Bake Coconut Mango Collagen Slice


Base Ingredients

Coconut Layer Ingredients

  • 200g cashews, soaked for 2hrs in hot water then drained
  • 40g coconut oil melted
  • 15g lemon juice
  • 70g full fat coconut cream, chilled, white part only
  • 120g rice malt syrup
  • 1 scoop bRAW inner beauty powder (peach and mango) 

Mango Layer Ingredients

  • 350g frozen mango, defrosted
  • 60g rice malt syrup
  • 20g corn flour
  • 10g lemon juice


  1. To make base, combine all base ingredients until a crumble forms
  2. Firmly crumble into 12 silicon muffin tins and freeze whilst making coconut layer
  3. To make coconut layer, blend all coconut layer ingredients in a food processor until smooth
  4. Spread coconut cream on top of base and freeze whilst making mango layer
  5. To make mango layer, blend all mango layer ingredients until smooth
  6. Transfer mango puree into a microwave-safe bowl and microwave in 15s increments, stirring between each increment, until puree is thick (around 4-5 x 15s)
  7. Spread mango layer on top of coconut layer and freeze for at least 3 hours or until solid
  8. Makes 12
