No Bake Coconut Mango Collagen Slice
Ingredients:
Base Ingredients
- 200g almond meal
- 40g rice malt syrup
- 20g coconut oil, melted
- ¼ tsp salt
- 1 scoop bRAW inner beauty powder (peach and mango)
Coconut Layer Ingredients
- 200g cashews, soaked for 2hrs in hot water then drained
- 40g coconut oil melted
- 15g lemon juice
- 70g full fat coconut cream, chilled, white part only
- 120g rice malt syrup
- 1 scoop bRAW inner beauty powder (peach and mango)
Mango Layer Ingredients
- 350g frozen mango, defrosted
- 60g rice malt syrup
- 20g corn flour
- 10g lemon juice
Method:
- To make base, combine all base ingredients until a crumble forms
- Firmly crumble into 12 silicon muffin tins and freeze whilst making coconut layer
- To make coconut layer, blend all coconut layer ingredients in a food processor until smooth
- Spread coconut cream on top of base and freeze whilst making mango layer
- To make mango layer, blend all mango layer ingredients until smooth
- Transfer mango puree into a microwave-safe bowl and microwave in 15s increments, stirring between each increment, until puree is thick (around 4-5 x 15s)
- Spread mango layer on top of coconut layer and freeze for at least 3 hours or until solid
- Makes 12
